It started with a craving — for the kind of bagels we'd eaten in Seoul's best bakeries. Dense, chewy, beautifully crafted, with fillings baked right inside. Nothing like it existed in Brisbane.
So we built it ourselves. Eastside Bagel brings the art of Korean-style baking to Queen Street — 48-hour cold-fermented dough, hand-shaped every morning at 6am, boiled and baked to golden perfection.
From stuffed olive & cheese bagels to house-made raspberry cream cheese and our signature pistachio cream buns, every item is made with the same philosophy: simple ingredients, obsessive craft, Korean soul.
